2019 MicroBio 'Microbio' Verdejo Rueda, Spain Cotar the “élevage” is done primarily100% Verdejo organically grown over sandy soils with gravel and clay deposits. Grapes are hand harvested, gentle pressing of the whole vintage (unlike some of his other wines), partial racking, and spontaneous fermentation with indigenous yeasts in stainless steel tanks and old foudre. Aged for 5 months with fine lees in 1,500L old foudres. Bottled unfined, unfiltered, and zero SO2. Deliciously aromatic with a hazy sunrise hue in the glass. Ismael
