The first batch of this came to the US in 2017 and was just 193 bottles in size
is sourced from younger-vine Merlot and Cabernet Franc and rests for 15 months in a combination of cement vat and barrel
Spontaneous fermentation takes place with natural yeasts found on the grapes in 1200L wooden barrels and lasts five months with temperature control
2018 Day Wines 'Belle Pente Vineyard' Chardonnay Yamhill-Carlton District, USA Catalonia Planted in 1957100% Chardonnay sourced from the Belle Pente vineyard. Grapes were direct pressed into stainless steel for one night. After settling, the juice was racked off of the lees into neutral French oak for fermentation. Aged 22 months in barrel.
